Spicy squash samosa

Curried butternut squash and peas in a crispy puff pastry makes a comforting mid-afternoon snack. The squash is high in beta-carotene which the body converts to vitamin A.

Ingredients

butternut squash, gluten-free puff pastry, onion, green peas, ginger, coriander, chilli pepper, cold-pressed rapeseed oil, lemon juice, Indian spice blend (cumin seeds, Mustard seeds, fenugreek seeds, black pepper, coriander seeds, turmeric, cinnamon, paprika, cardamom, nutmeg, chilli powder, mace, cloves), iodised salt

HOW TO HEAT

Can be eaten hot or cold. If heating, remove sleeve and pierce film lid. Microwave on full power for 1 minute until piping hot.
